Cooking Wild Seasonings Recipe — Teriyaki Summer Sausage

Check out this delicious, sweet, savory and salty Cooking Wild Seasonings recipe for homemade Teriyaki Summer Sausage using CWS summer sausage seasoning packs.

What you’ll need to make it:

  • CWS Summer Sausage seasoning
  • Ground chuck/meat of choice

Utensils:

  • Charcoal grill
  • Charcoal
  • Apple chips
  • 2 kitchen thermometers

Directions:

Follow directions on back of seasoning pack to follow recommended amounts of seasoning per pound of meat. (Ex. 1/2 lb meat gets 2 tbsp seasoning.)

Marinate meat in seasoning overnight in the fridge.

(Day of) Preheat grill to between 100-150 degrees Fahrenheit.

You’ll want hot coals in the middle of the grill for a low and slow burn using charcoal and apple wood chips.

Once the flames are steady/under control, place your sausages on the grill and begin the smoking process.

It is recommended to use two thermometers–one to monitor the internal temperature of the sausage, and one to monitor the internal temperature of the grill itself.

About 2 and a half hours in, check your temperatures (do not lift the grill lid). Internal temp. of the sausage should be around 155 degrees, and the internal temp. of the grill should be around 190 degrees. Once your temps reach 155 and 190, the sausage is done!

Let the sausage rest for 15-20 minutes before cutting into it. Serve with cheese and crackers, on a charcuterie board with spreads, fruits, etc. or just enjoy it on its own!

This is a fun way to try something new and super easy to plan and bring along on a campout.
